Fontina cheese is up next for the FoodGrizzly World Cheese Tour. Fontina cheese has a mild, nutty flavor that is very earthy. The selections this week consist of a Danish and Italian Fontina, both picked up at a local grocery store.
A deconstructed panini sandwich was the vehicle for the fontina. The fontina panini many times can be found with arugula, tomatoes and fontina cheese melted on a focaccia bread. While probably not as tasty as the melted version the deconstructed fontina panini was super simple to prepare, looked great and offered some great tastes. The arugula added a nice peppery taste and boldness to the fontina. The bread was a great pairing with this cheese as it was gentle enough to let the fontina stand out.
