Chuck Eye Steak And Mushrooms

Scored these awesome steaks @ Bill the Butcher . This is a chuck eye steak — it’s off the chuck but super tender and in the same price range as the chuck meat.

These bad boys are brushed with olive oil and seasoned with salt and pepper — that’s it ! They are left on the counter for an hour or so to come up to room temperature.

Steaks Are Ready To Go !

Now is a good time to start the grill. Heat to high heat.

While FoodGrizzly is waiting for the grill to heat up a mushroom sauce is in order. Total cook time for these mushrooms is about 35 minutes.

Ingredient list

  • 1 pound button mushrooms, sliced
  • 1 tablespoon green onion, chopped
  • 1 clove garlic, chopped
  • 1 cup red wine
  • 1/2 cup beef broth
  • 2 tablespoons butter
  • 1 tablespoon mustard
  • 1 tablespoon worchestire

Start off by sauteeing the mushrooms. Place mushrooms in pan and apply a liberal amount of salt. Cook the mushrooms on medium-high heat, covered for about 5 minutes. When the water starts to cook out of the mushrooms remove the cover until all the water evaporates. The cook time will be 10-15 minutes.

Saute Some Shrooms

Once the water is fully evaporated add the garlic and green onions. Cook for 1-2 minutes.

Time to add the red wine and beef broth. Continue to cook uncovered until most of the liquid has cooked down. This will take around 15 minutes. Reduce heat to medium.

This is a good time to cook the steaks. These steaks were cooked about 4 minutes per side to leave them medium in the center.

Final step on the sauce is to stir in the butter, worchestire and mustard. Continue cooking for one minute and turn off heat.

Stir in the Final Ingredients 

Serve the steak and mushroom sauce with a vegetable for a savory afternoon meal.
