Growing up in Minnesota, hotdish was one of my favorite meals. A hotdish generally has a starch, meat, binder and some vegetables. This is a simple meal to cook, is good for leftovers and is perfect for the fall and winter time when it’s cold outside.
Ingredients:
- 1..5 pounds ground beef
- 1/2 red onion, chopped
- 1 jalapeno, chopped
- 3 cloves garlic, chopped
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 can mushroom soup
- 1 cup milk
- 1 cup water
- 1/2 pound mushrooms, sliced
- 16 ounces frozen tator tots
- pepper
- salt
- fried onions
Directions:
- Brown ground beef. Saute onion, jalapeno, garlic and pepper until starting to soften. Season with salt.
- Combine cooked ground beef and sauteed vegetables in casserole dish or slow cooker.
- Add mushroom soup, milk and water. Mix.
- Top with sliced mushrooms.
- Cover, and bake at 350 for 30 minutes.
- Top with tator tots and bake another 30 minutes.
- Remove and let cool for 15 minutes.
To serve top with fried onions.
